Over a maque choux of sauteed peppers, onions, fire roasted corn, tomatoes and okra

Filet Mignon Tchoupitoulas (GF)
Smoked yukon gold potato puree, roasted mushrooms, caramelized onions and honey green peppercorn sauce

Digging Texas Creole Tart
Farmer's Summer squash, roasted eggplant, charred peppers and Texas Chevre in crispy pastry over smoked Creole tomato sauce
