Did you know that March is National Nutrition Month. We've partnered with Recipe for Success in their VegOut Program for an all-month feature on vegetables! We'll have a different menu weekly.
Week 1:
Sweet Potato & Carrot Soup
Sorghum marshmallow and Creole spiced pecans
OR
Texas Field Pea Salad
Gundermann Farm Black-Eyed and Crowder peas, Texas Chevre
AND
Vegetable Palette
Root vegetables & pearl barley, salt roased beets & blue cheese, stewed okra & tomatoes, grilled Portobello & cream peas, sweet potato tart
Week 2:
Truffled Mushroom Stew
Saute of king trumpet mushrooms with Texas field peas, crispy sweet potatoes and mushroom consommé
OR
Salt Roasted Beet Salad
Red & golden beets, lollo rosa, Texas goat’s cheese, cayenne spiced pumpkin seeds and aged sherry vinaigrette
AND
Vegetable Palette
Herb roasted root vegetables & quinoa, stewed okra & tomatoes, spaghetti squash & pears, sweet potato & celeriac gratin
Week 3:
Creole Onion & Roasted Garlic Soup
Candied garlic ships and gruyere profiterole
OR
Honey Roasted Butternut Squash Salad
Sugarcane marinated beets, baby arugula and cayenne pepitas and melted leek vinaigrette
AND
Vegetable Palette
Jalapeno cornbread pudding & corn maque choux, stewed okra & tomatoes, ratatouille galette, salsify & roasted pear puree, roasted root vegetables, field peas & mustard greens
Week 4:
Smoked Tomato & Salsify Bisque
Basil & Mozzarella grilled cheese crouton
OR
Sea Salt Roasted Cauliflower Salad
Pickled spaghetti squash, baby arugula, grape tomato raisins and black-eyed pea vinaigrette

Vegetable Palette
Collard green custard & jalapeno cornbread, field pea hummus & cayenne crackers, roasted root vegetables & pecan wild rice, sugarcane smoked beets & butternut ribbons
